Our winemaking methods combine traditional expertise with modern innovations. Depending on the grape varieties and vintages, we use different approaches:
- Fermentation in temperature-controlled stainless steel vats to preserve the aromatic brilliance of whites and rosés.
- Ageing in oak barrels or casks to subtly structure and refine our reds.
- Use of concrete eggs to promote natural micro-oxygenation, which enhances the purity of the aromas.
