Tasting

Colour: A lovely, very intense, deep garnet colour,

Nose: aromas of vanilla, coconut, exotic wood, quickly evolving towards truffles, underbrush then roasted coffee and cocoa, ending on liquorice notes.

Palate: Straightforward attack in the mouth, with very ripe tannins, enveloping the entire palate in a powerful and persistent finish.
Same aromas on the nose as in the mouth. A wine that will evolve nicely, suited to ageing.

A highly expressive wine in harmony with full-flavoured dishes, like boar, venison, thrush, truffle-based fare …and naturally any one of a variety of aged cheeses.

Winemaking

The grapes, from the Château’s oldest variety, are sorted and only the overripe berries are selected and put in vats.
48 hours of maceration is then followed by fermentation at controlled temperature. To extract maximum matter, vatting is done at high temperature and can last for up to one month.

Daily tastings are done in view of defining the optimal pressing time. Only wine from the first presses is kept. It is then put in oak barrels for 2 years, before being bottled and aged in the cellars of the Château for several months and then sold.

Matured in oak barrels, then aged in the cellars of the château, this red wine is a reminder that in Provence, the terroir also lends itself beautifully to producing great wines of character.
