90% Rolle and 10% Clairette

Tasting

Colour: Lovely colour, bright, yellow, very vivid.

Nose: Subtle woody, vanilla nose, evolving towards hazelnut and almond aromas with hints of smoke.

Palate Straightforward attack in the mouth, revealing a fresh and rounded wine, with the wood still nicely mellow. A wine that will evolve over one or two years and will improve throughout the ageing process. At its best with fish dishes.

Winemaking

Harvesting is done manually. The grapes are left to macerate in vats for one night. Pressing is a delicate operation, the press juice and free-run wine are blended. Natural decanting of the juice then takes place over 24 hours. The clear juice is left to in-barrel ferment. The fermentation temperature is adapted to the ripeness of the grape along with the quality of the vintage. This wine is aged on fine lees. Regular stirring for a few months enhances richness. These wines are then blended and bottled.

These products are either vinified or aged in oak barrels, making them silky, fleshy and full. The perfect accompaniment for gourmet fare. Will please even the most demanding palate.
